Only the HP category widget will have a different title color based on category colors. All other widget titles will color according to your theme color palette set in the Theme Options. In case you want to style a specific widget (like a text widget) differently, some custom CSS would be required.
on the sides of the widgetized areas, there are colors that I cannot seem to find on how to change.
On the demo, there are a number of colors for each widgetized area which I would like to emulate with my color scheme - please advise.

The HP - Category widget will automatically pull the category color when one is set for the selected category.
You can set your category colors in Posts > Categories.
Please also have a look at the documentation > Category Styler
