I think you forgot to attach the screenshotAnyway if you're referring to the top slider, it takes the latest posts (and related featured image) of that category, in chronological order. Modifying this behavior would require customizing the code.
The permalink structure is not related to the theme, you can define it in WordPress Settings > Permalinks

Is there a way to change way which image gets shown in the top of a category page?
What is the best ratio for the top image of a category page?

Okay I took a screen shot of what I was referring too, I'm talking about the big banner on the category page.
Also is there a way to change the hyperlink structure of the category pages?
